How to make Summer Herb Frittata

Ingredients

1 tablespoon Olive oil
1/2 white onion, small diced
1/2 cup fresh chopped herbs- parsley, chives, basil, thyme
1 dozen eggs, mixed
to taste salt & pepper

Directions

1-Preheat oven to 325
2- Crack eggs into a large bowl. Using a fork mix the eggs, breaking down the yolks as you go. Make sure not to whip the eggs- this will get air into them and the frittata will collapse.
3-Heat a medium cast iron pan (or oven safe pan) up over medium-high heat.
4- Once pan is hot add oil, swirling to coat the bottom of the pan.
5- Add onions and a large pinch of salt. Cook until translucent about 3 minutes.
6- Add the fresh chopped herbs mixing well with onions.
7- Slowly pour in the eggs, mixing the eggs as you go with a spatula. Evenly distribute the onions/herbs season with salt & pepper. Using your spatula run it along the edges of the pan. Once the edges are set place in the oven for about 20-25minutes or until the center has no more liquid.
